Halloween pumpkin peppers stuffed with seedy pesto courgetti
For the pesto
1 clove of garlic, peeled
60g fresh basil
30g fresh parsley
90g Raw Health super seed spread
40-50ml Raw Health olive oil
2 tbsp. Raw Health apple cider vinegar
Salt and pepper to taste
For the peppers
3 orange peppers
3 large courgettes
3 heaped tbsp. raw seed pesto
3 handfuls of Raw Health kalamata olives, stoned and chopped
Place all ingredients into a food processor and blend until well combined and to a consistency of your liking, adding more oil if you want it thinner. Season to taste.
Store in the fridge until ready to use. This may make more than you need but any leftovers are nice with pasta or as a salad dressing.
Use a sharp knife to slice the top of the peppers off and remove the seeds. Carefully, using a smaller knife, cut out triangles for the eyes and nose and a big toothy mouth!
Use a spiraliser your make spaghetti strands from your courgettes. Mix the courgetti with the pesto in a large mixing bowl and add the olives.
Divide the courgetti between the peppers and pop the ‘lid’ back on before serving.
